Homemade Pineapple Upside Down Cake


I know it doesn't look perfect like all the food websites and Pinterest.  It tasted yummy though and there is none left!

It's pretty easy to make.

1 cup sugar
1 cup flour
1 teaspoon baking powder
3 egg whites
1/4 cup of butter
1 cup brown sugar
1 can of sliced pineapple

Preheat the oven to 375 degrees.  

You sift together the flour and baking powder, then set it aside.

Whip the egg whites together.  Mix in the sugar until it is a creamy substance.

Add the pineapple juice from the can to the flour/baking powder mix.  I'm not sure how much I added, I didn't measure it.  It was enough to make it a batter.

Fold in the egg/sugar mixture to the batter.

Put the butter in the cast iron and melt it.  When it is completely melted, add in the brown sugar. I didn't measure this out either.  I just made sure it was enough to cover the bottom of the skillet.  Make sure it is spread evenly on the bottom of the pan.  Add the pineapple slices in the pattern above.

Spread the batter mix evenly over the pineapples.  

Bake in the oven for 30 - 40 minutes.

Flip it out of the cast iron skillet onto a cake plate.

ENJOY!

Serves 8 people.

Ham and Cheese Sliders

I'm going to move some stuff from my other blog over here, before making it inactive.  This is one recipe that I have had a lot of success with and is a hit on Pinterest.



Here is another creation of mine. 

Fresh bakery rolls  -- I used a package of 12

Deli Honey Ham

Provolone Cheese

Miracle Whip

I sprayed the pan with cooking spray.  My daughter put the sandwiches together while I made the sauce.  Each roll was cut in half.  She put Miracle Whip on one side of the roll.  Two pieces of yummy ham and a slice of provolone on each roll.

Sauce Recipe:

Equal Parts of Yellow Mustard and  Honey

3/4 teaspoon Worcestershire Sauce

 1/2 cup melted Butter

Poppy Seeds to taste

After my daughter assembled the sandwiches, we poured the sauce on top.  We put the over at 350 and let them cook for about 15 minutes.

They turned out a perfect golden brown and there was not a single slider left.

 And don't forget your pickle on the side!

1.       My middle name is Ann and it was both of my grandmother’s middle names.
2.       I have a degree in Secondary Education-Social Studies.

A Typical Day
You have seen the ever popular CherishingHopesanddreams.blogspot.com “Thirty Things” posts.  It became a Pinterest sensation about a year and a half ago.  I know a lot of blogs started up just because of that one blog. 
I have decided to tackle number 12 out of the 30 things list.  I don’t want to do the list in order.  What fun is that? Order/Disorder. It’s not hurting anyone.
So here it is: Describe a typical day in your current life. 
I have decided to describe a typical Monday for you.
5:15 am: My alarm goes off.  I hit snooze….for the next hour.
6:15 am: Out of bed. Pick out the kiddos clothing. Wake them up. Wake them up again. Get dressed. Take care of personal needs. Make sure kids take care of their personal needs. Pop a waffle or strudel in the toaster. Makes sure the kids eat. Pack lunches. Help Peyton find socks. Make sure kids have lunches and backpacks. Gather everything I need for the day. Say goodbye to the cat trying to escape outside. Lock the door. Go to the car.
7:00 am: Get in the car. Drive the kiddos to their summer day camp program.
7:30 am: Arrive at day camp. Check kids in. Tell Peyton not to break his glasses again. Hug and kiss the kids goodbye.
7:55 am: Park in the gravel pit they call a parking lot and walk to the State Building.
8:00 am: Work, work, work. Call people, interview people, investigate, enter verifications, try to figure out why people send me some of the stuff that they do. Hear stories. Try to figure out which stories are true.
12:45 pm: Lunch. Sit and relax. Eat. Read a magazine. Read a book.
1:30 pm: Back to work.
4:45 pm: Leave work. Walk to Gravel Pit.
4:55 pm: Arrive at Gravel Pit Parking lot. Drive to get the kiddos.
5:20 pm: Pick up kiddos at Papa’s. Watch kids play around for a little bit.
5:45 pm: Drive Home.
6:15 pm: Arrive at home. Take care of the animals. Eat Dinner. Watch Wheel of Fortune. Start some laundry. Maybe relax a few minutes in front of the iPad.
7:00 pm: Get ready for practice.
7:30 pm: Leave home for derby practice in Independence.
7:50 pm: Arrive at Practice. Get my gear on and get ready to skate.
8:00 pm: PRACTICE! Practice how you play. J
10:00 pm: Sweaty and tired. Take gear off. Head home from practice.
10:30 pm: Home…
11:00 pm: Take a shower, try to relax, play on the iPad.  Pretend to watch a movie. Fall asleep while pretending to watch a movie.
